Gass and Tomato on the olfatory, sweet entry on palate, no bitterness and very light pungency. Olive Leafs and Tomato on palate.
Mild olive oil, and too oily in the after taste. A balanced EVOO but maybe not for my personal taste.

Medium to light Fruityness, Green Grass, and Green Fruit Aromas. Sweet Entry Light Bitterness and Light to Medium Pungency. Notes of Butter and olive leaf in mouth.
Good EVOO, but not excellent. Lacks complexity and depth but still good and fresh. Maybe in the months after the harvest it shines a bit more.

Light fruitiness, more to the mature side, a bit almond in olfatory.
Sweet entry, light pungency and bitterness (a bit more pungent than bitter).
Almond/buttery taste. Good Virgin Olive Oil, as i felt some wet wood defect but it might be my beginner sommelier condition.

Medium Fruitiness more to the green, herb aromatic, herbs, pepper and apple Sweet entry, medium to light bitterness and Pungency almond and buttery notes in the mouth, Lost some strength after a year in the shelf, still a good EVOO

Light fruitness, green aroma. Sweet entry light pungency and bitterness. Very Mild EVOO with almost no taste after one year of shelf (it is late october)

Light aroma more to the ripe side, fruity aroma with banana and artichoke notes. Sweet entry with light bitterness and pungency. No date at the bottle, so as far as i know the harvest could have happened 100 years ago. And that is why i found it a bit mild.
Despite being a Mild EVOO, i found it very interesting and complex. Some smoked wood after taste, and earthy notes on the nose. Almost no Pungency, no bitterness at all, but somehow still complex. Some Berries and fruitness in the nose and some depth in palate. Interesting EVOO.
